2/24/2021 0 Comments Week 2: The BeginningProgress:The main focus of week 2 was to start making conscious choices about what I am eating. I have set light goals for myself at the beginning of this project because I wanted to ease into becoming a vegetarian. This week I allowed 6 days that I could eat meat but I only ate meat on 3 days. Even though I didn't eat meat all 6 days it was nice to have a goal. Next week I plan on only allowing myself to eat meat for 5 days. If possible, I would like to do less than that. So far it has been decently easy to cut out meat. I am glad that I have to do this project because it has pushed me to go for a goal that I have wanted to do. My favorite part of this week was cooking for the first time. What I cooked:Since I've never cooked a lot in the past, I decided to choose an easy recipe for the first meal. I decided to go with a Caprese pasta salad. It was pretty easy but also really fun to cook. Since I haven't had a lot of cooking experience, I asked my mom to help me cook. I started with cooking the tomatoes and pasta. While each of those cooked, I cut up the basil and cheese. Once the pasta finished, I combined the pasta and the tomatoes. After that cooled, I added the cheese, basil, and vinegar. Although this recipe wasn't exactly what I was expecting, it was still really good and I would make it again. This recipe is a good option for the future because it was easy to cook, it doesn't take a lot of time, and most importantly it's vegetarian.
